How Thick Should You Roll Cookie Dough?

Ask ten bakers how thick to roll cookie dough and you'll get ten vague hand gestures. That's a shame, because thickness is the single biggest reason a tray of shapes comes out blurred, snapped, or both at once. Roll too thick and the dough puffs and slumps until your dinosaur is a lump with a tail; roll too thin and its legs snap off somewhere between the cooling rack and the biscuit tin. The right numbers aren't secrets, they don't change from recipe to recipe as much as you'd think, and you can hit them every time with kit that costs less than a bag of flour.

How thick to roll cookie dough: the numbers

These are the thicknesses we work to in the workshop. Every design we sell gets test-baked before it goes on sale, and this is the window where all of them behave.

If you only remember one number, make it 6mm. It forgives a hot oven, a soft dough and an enthusiastic four-year-old with a cutter. The refinements below are for when you want crisp detail or a flat base for decorating.

Plain cut-outs: 6mm

A 6mm biscuit is the workhorse. It survives being picked up by the head, it bakes through evenly at 180°C (350°F) — 160°C in a fan oven — in 9 to 11 minutes, and it keeps a little tenderness in the centre without the edges catching. It's also a thickness a well-made cutter gets through in one firm press, no wiggling, which matters when a child is doing the pressing.

Biscuits you plan to ice: 5mm

Royal icing sets hard and sweet, and adds a millimetre or two of its own. Put that on a 6mm biscuit and you're eating a doorstep; on a 5mm base the ratio is right. And with icing, flatness matters more than the exact number — flooded icing is a liquid, and it will find every dip in the surface and pool there. Embossed and imprint designs: 5mm

An imprint cutter presses its lines roughly 1 to 1.5mm into the surface, so the dough underneath needs enough body left to hold together — below 4mm the stamp starts punching through to the worktop. Above 6mm you meet the opposite problem: the thicker the biscuit, the more it puffs in the oven, and puff is what irons imprinted lines flat. We bake embossed designs rolled to 5mm with the oven dropped to 170°C (340°F), or 150°C fan, for a couple of extra minutes. A gentler bake means less steam, less rise and sharper lines.

Why shapes blur, and why they snap

Blur is two forces working together. Spread happens when the butter melts before the egg and flour have set a structure, and the whole shape slumps outward. Puff happens when steam — and any raising agent — pushes the surface up and rounds off your edges. Both scale with thickness: a thicker sheet is more mass to slump and more water turning to steam, which is why a recipe that holds a circle at 8mm can still lose a unicorn's horn. If your dough contains baking powder, that's worth revisiting — our cut-out dough recipe leaves it out on purpose. And if shapes lose their edges even at a disciplined 6mm, thickness isn't the culprit; work through why cookies spread instead.

Snap is the boring opposite. Under 4mm, any shape with a thin section — ankles, tails, antennae, a wand — becomes a lever waiting for a thumb. Thin sheets also overbake in the time the recipe expects, and an overbaked biscuit is a brittle one. The third cause of snapping costs nothing to fix: biscuits are soft when they leave the oven, so let them sit on the tray for five minutes before you move them, however good they smell.

A useful rule: if a raw shape can't survive the trip from worktop to baking tray, it won't survive the biscuit tin either. Roll thicker, or chill the sheet before you cut.

Cheap tricks for a perfectly even sheet

An uneven sheet gives you both failures on the same tray: the 3mm edge browns and snaps while the 8mm middle stays pale, doughy and blurred. A dough sheeter solves this for about a hundred pounds. These solve it for pocket change.

Guide rings on the rolling pin

Silicone guide rings slide onto each end of the pin and hold it a fixed height off the worktop. A set costs a few pounds and usually includes 2, 4, 6 and 10mm. They're the easiest option for children to use, with two caveats: they only fit a straight pin, not a tapered one, and your usable rolling width shrinks to the gap between the rings.

Dowels or slats from the hardware shop

Two lengths of 6mm dowel laid either side of the dough turn any pin into a machine — the pin rides the rails and physically cannot go lower. Timber merchants sell dowel and square-section strip in 4, 5 and 6mm for less than the price of a coffee, and square strip is the better buy because it doesn't roll away mid-pass. Write the size on the ends before every pair in the drawer starts looking identical.

Roll between two sheets of parchment

Rolling between baking parchment means no dusting flour, and that matters more than it sounds: every dusting works more flour into the surface, and a floury sheet is a dry sheet that cracks at the edges and bakes tough. Roll the dough between two sheets — rails still work, sitting outside the top sheet — then slide the whole thing flat onto a tray and chill it for 15 to 20 minutes before peeling and cutting. Cold dough takes a cleaner cut, releases from the cutter without stretching, and holds imprinted detail noticeably better.

Quick troubleshooting

  • Detail vanished in the oven: too thick, too hot, or the dough went in warm. Roll at 5mm, chill the cut shapes for 10 minutes, and drop the oven by 10°C (25°F).
  • Edges caught, middles doughy: an uneven sheet. Use rails or rings — and never mix thicknesses on one tray, because the thin ones burn before the thick ones set.
  • Shapes snapped while decorating: rolled under 4mm, overbaked, or moved off the tray too soon.
  • Edges cracking as you roll: the dough is too cold or too floury. Let it sit for 10 minutes, press the cracks together and carry on.
  • The third re-roll turned tough: gluten. Press scraps together gently instead of kneading them, and give them 10 minutes in the fridge before the next pass.

Once the pin has its rails, the cutters are in the shop.
